Salmon with Lemon Dill Sauce
A quick and easy recipe that is the perfect light refreshing meal during these ever-increasing heat-filled days. ( I use Prudhomme’s Salmon Seasoning, don’t make fun even I know when someone has out seasoned me, his stuff Is good good)

1 1/2 lbs Salmon skin removed - cut into 6 0z portions
Olive oil
2-3 tbsp seasoning of your choice
1/2 tbsp freshly squeezed lemon juice
Pinch of salt
1 tsp fresh ground black pepper
6 oz sour cream( you can also use Greek yogurt)
1/8 cup chopped fresh dill
1 tsp garlic powder or finely chopped cloves of garlic
Preheat oven to 425 degrees
Line a heavy baking sheet with foil and lightly oil
Add Salmon to pan. Very lightly rub olive oil on Salmon pieces and the sprinkle salmon with seasoning mix
Roast Salmon in over for 10-15 minutes until opaque in the center
While salmon cooks make the sauce. Whisk together lemon juice, salt, pepper, sour cream dill and garlic.
Let salmon cool slightly and serve with sauce.
